Kourabiedes are popular Greek shortbread style butter cookies, covered in powdered sugar and quite popular for the holidays. We are providing a super simple recipe that’s vegetarian but definitely delicious and fun to eat!
This isn't your yiayia's recipe because it's much simpler but doesn't lose any taste!
Serves: 50 | Difficulty: Easy
Ingredients:
- 1 pound (4 sticks) unsalted butter
- ¾ cup confectioner's sugar plus more for dusting
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract
- 2 tablespoons brandy or orange juice
- 4½ cups all purpose flour
- 1 cup slivered blanched almonds (optional)
Steps:

Preheat oven to °350F

Cream butter until light in color and fluffy

Slowly add confectioners sugar, vanilla extract, and brandy or orange juice

Add flour gradually and mix until combined

Mix in slivered almonds, if using

Using a 1 inch cookie scoop, scoop dough and form a ball

Place on a parchment lined baking sheet and press to form round discs

Bake for 20 minutes or until lightly gold
NOTE: While cookies are baking, sift some confectioner's sugar onto some wax paper. While the cookies are still warm, place them on the sifted confectioner's sugar to coat the bottom and then sift some more of the sugar on top to coat cookies.
