Greek Yogurt Pancakes



Using Greek yogurt anywhere and everywhere isn’t really a new concept for us, we’ve been doing it for as long as we can remember. But in a casual conversation the other day, we mentioned our super easy pancake recipe using Greek yogurt and the response was so enthusiastic that we figured maybe we should just post it for all. We love these pancakes and make them all the time. We can put our guarantee that you will love them too!


 



A healthier (and may we say tastier!) alternative to a standard pancake recipe!

Serves: 2  |  Difficulty: Easy


Ingredients:

  • 8 ounces Greek yogurt 2% (we use Fage)
  • 1 egg
  • 1 teaspoon Greek honey
  • 1 teaspoon pure vanilla extract
  • ½ cup wheat pastry flour
  • 1 teaspoon baking soda

Steps:

  1. In a small bowl stir the yogurt, egg, honey, and vanilla until smooth.

  2. In a separate bowl, mix together the flour and baking soda.

  3. Pour the yogurt and egg mixture into the bowl with the flour and baking soda. Stir to combine. The batter will be very thick.

  4. Spoon the batter onto a sprayed griddle or pan heated to medium-high. You can make four larger pancakes or eight smaller ones.

  5. Flip the pancakes when they start to bubble a bit on the surface. Cook until golden brown on both sides and serve with real Maple syrup.
