Greek-Style Summer Salad with Feta



This is a Greek salad modified a bit to make it super simple with ingredients that are usually on hand. We make this version almost every night during the summer which makes it a staple in our household.


 



Made very quick and simple!

Serves: 6  |  Difficulty: Easy


Ingredients:

  • 4 medium or large ripe tomatoes (cut into wedges, and if large, the wedges cut in half crosswise, or 1 pint cherry tomatoes, cut in half)
  • 1 cucumber (cut in half lengthwise, seeded if desired, then sliced into half circles about 1/3 inch thick)
  • 2 tablespoons red wine vinegar
  • ¼ cup extra virgin olive oil
  • ½ cup crumbled feta
  • ¾ teaspoon dried oregano
  • to taste sea salt
  • to taste ground pepper

Steps:

  1. Add the prepared tomatoes, cucumber, salt, pepper, vinegar, and olive oil to a medium to large bowl. Toss a bit.

  2. Add the feta and herbs, and toss again.

  3. Taste, adjust the seasonings, and serve.
