This is a Greek salad modified a bit to make it super simple with ingredients that are usually on hand. We make this version almost every night during the summer which makes it a staple in our household.
Made very quick and simple!
Serves: 6 | Difficulty: Easy
Ingredients:
- 4 medium or large ripe tomatoes (cut into wedges, and if large, the wedges cut in half crosswise, or 1 pint cherry tomatoes, cut in half)
- 1 cucumber (cut in half lengthwise, seeded if desired, then sliced into half circles about 1/3 inch thick)
- 2 tablespoons red wine vinegar
- ¼ cup extra virgin olive oil
- ½ cup crumbled feta
- ¾ teaspoon dried oregano
- to taste sea salt
- to taste ground pepper
Steps:

Add the prepared tomatoes, cucumber, salt, pepper, vinegar, and olive oil to a medium to large bowl. Toss a bit.

Add the feta and herbs, and toss again.

Taste, adjust the seasonings, and serve.
