Olive Oil Cake with Orange



We’re obsessed with this delicious, moist orange cake.  No butter.  No need to cream ingredients first.  Not even a need for an electric mixer.  This tasty dessert, using healthy, Greek olive oil, is so easy to make!


 



Quick and easy moist Greek dessert!

Serves: 8  |  Difficulty: Easy


Ingredients:

  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1 cup sugar
  • orange zest from 1 orange
  • 1 cup extra virgin olive oil (plus more for greasing the pan)
  • about ¼ cup confectioners sugar (optional for dusting)
  • 1 cup orange juice (about 3-4 oranges)

Steps:

  1. Preheat oven to 350°F.

  2. Lightly grease bottom and sides of 10" spring form pan with olive oil.

  3. In a large bowl, combine the flour, baking powder and salt.

  4. In another large bowl, beat the eggs with sugar until well combined. Add the orange zest and mix well.

  5. In a large measuring cup or bowl, combine the olive oil and orange juice.

  6. Gradually mix olive oil mixture into egg mixture, Then gradually add in the flour mixture until you form a smooth batter.

  7. Pour batter into prepared spring form pan. Bake for 45 minutes, until golden brown and tester inserted in the middle comes out clean.

  8. Allow cake to cool completely. Release from mold and dust with confectioners sugar (optional).
